Mushroom Bourguignon / Bourguignon de champignons 🍄 – délicieux et facile a faire!

Ingredients for bourguignon:
1 oz dried porcini mushrooms
16 oz cremini mushrooms come sliced
1 onion, finely chopped
2 carrots, peeled and chopped
1 red bell pepper, chopped
1 cup red wine
2 tablespoons tomato paste
4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground
1 teaspoon dried thyme
1 teaspoon dried oregano
2 tablespoons vegan butter
2 tablespoons spelt bread crumbs
2 tablespoons olive oil

Ingredients for mashed potatoes:
4 russet potatoes
1/2 cup unsweetened oat milk
1 teaspoon garlic salt
1/2 teaspoon pepper, freshly ground
2 tablespoons vegan butter
1 sprig fresh parsley, chopped (garnish & is optional)

Directions for bourguignon:
1. Pour the wine in a bowl and let the dried porcini mushrooms soak in it.
2. Heat 1 tablespoon of the olive oil in a large pan over medium heat and sautée the chopped cremini mushrooms for about 3 mins. Empty pan contents on a plate and set aside.
3. Heat the remaining 1 tablespoon of olive oil in the pan over medium heat and sauté the onion, carrots, red bell pepper, garlic, thyme, oregano, salt, and pepper for about 5 mins.
4. Remove hydrated porcini mushrooms from the wine (keep the wine). Roughly chop the hydrated porcini, and add to pan along with the sautéed cremini mushrooms that had been set aside, and the tomato paste. Cook and stir for about 5 mins.
5. Add the wine to the pan, and increase temperature to high until sauce comes to a boil. Then reduce heat to low and let cook for about 10 minutes until sauce has reduced by about half.
6. In a separate bowl, mix the vegan butter and spelt bread crumbs. Add to pan and stir so that sauce thickens. Enjoy with side of mashed potatoes.

Directions for mashed potatoes:
1. Fill pot with water and set on high (to boil).
2. Peel potatoes and cut each potato into 4 pieces.
3. When pot of water comes to a boil, place potatoes inside and wait until they are soft to mash.
4. Drain potatoes but keep them in pot. Add oat milk and vegan butter to pot and mash potatoes.
5. Add garlic salt and pepper to mash. Add garnish. Makes about 4-6 servings. Bon appétit!
