[Part 2 of 2] Modified Khoresh Fesenjan (Iranian pomegranate and walnut stew) with saffron rice.
Fesenjan is a sweet and sour stew that is one of the darlings of Iranian cuisine. When people speak its name, it is often to express a longing for it, or to recount their enjoyment the last time they had it!
This dish is traditionally made with chicken, which I substituted with eggplant. And I would be remiss if I did not mention the star ingredient, pomegranate molasses. 😍 I did not use a traditional recipe here and I have to admit, it just wasn’t the same. I am working on making a veganized version of this recipe that will do it justice (to be continued…).
