[Portage camping latergrams – part 1 of 5] These tasty no-bake vegan energy balls were the quick go-to snack during a long stretch of portaging that required a lot of physical effort! Recipe yields about 18 of these balls. Will definitely be making these tasty treats again for active outdoor trips!
12 dates, pitted and soaked in a bowl of water for about 10 mins
6 tablespoons peanut butter
3 tablespoons of flax seed and sunflower seed mix
50 grams dark chocolate, broken into small pieces
50 ml maple syrup
1. Put dates in food processor and blend until they form a sticky mound.
2. Add other ingredients to food processor and pulse. Be careful not to blend too much so that there is some chunkiness to the mixture.
3. Roll mixture into balls.
4. Place balls onto baking sheet and refrigerate them so they set.
