[Portage camping latergrams – part 3 of 5] Homemade Pad Thai for camping. 🏕
This meal used the same Pad Thai recipe I previously posted but with added poblano peppers. Prepared separate elements of this meal at home and put everything together at the campsite.
Pre-camping preparation for this meal: packed dry noodles, one lime, chopped and dehydrated poblano and red peppers, made peanut sauce and packed it separately from all other ingredients, fried tofu, garlic, and sprouts together, chopped cilantro and green onion (garnishes) and packed them separately.
At campsite: cooked noodles in boiling water, drained most of water, added the dehydrated poblano and red peppers to the remaining water to rehydrate them. Then added the pre-made tofu, garlic, and sprout mix and the pre-made peanut sauce. Topped with cilantro and green onion garnishes and lime juice. So delicious, and comforting to enjoy good food whilst camping! ☺️
