Vegan peanut butter stew, inspired by Mafé, a dish made in several West African countries (and known by several different names). Traditionally, this dish is made with meat. I’ve omitted the meat and made it with portabello mushrooms, drizzled with the delicious Mafé-inspired sauce, served with a side of rice, sautéed kale and garlic! 🧄 🥬
