Vegan tourtière and roasted root vegetables – the perfect Christmas dinner! The tourtière filling has beets, mushrooms, potatoes, celery, carrot, leek, onion, chickpeas, and vegan butter.
I previously posted about this recipe, which I first saw on the Great Canadian Baking Show (vegetarian version). I simply substituted the butter with vegan butter, and the 2 eggs with 2 tablespoons of chia seeds soaked in 2/3 cup of water for 15 mins, et voilà, it becomes vegan. I highly recommend this recipe for festive vegan dinners! It is very delicious!
